Aebleskivers
David had these at work one morning and went and bought an aebleskiver pan. They are time consuming, but a lot of fun for a Saturday morning.
| 2 | Egg Whites |
Beat with an electric mixer until they can hold a stiff peak. Set aside.

| 2 | tsp | Baking Powder |
| 1 | Tbsp | Sugar |
| 1/2 | tsp | Salt |
| 1/2 | tsp | Baking Soda |
| 2 | egg yolks | |
| 4 | Tbsp | butter, melted |
| 2 | c | buttermilk |
Mix ingredients together one at a time until smooth. Gently fold in egg whites last.
Put about 1 tablespoon of vegetable oil in the bottom of each aebleskiver pan cup and heat until hot. We use a silicone pastry brush to brush the oil into each pan cup.
Pour in about 2 tablespoons of the batter into each cup. As soon as they get bubbly around the edge, turn them quickly (Danish cooks use a long knitting needle, but a fork will work. We use a bamboo skewer). Continue cooking, turning the ball to keep it from burning.
I usually don't have buttermilk, so I substitute 2 Tablespoons lemon juice and regular milk to fill to 2 cups. It works really well.
